I received a visa exemption stamp in my passport for 30 days on my Phuket sandbox arrival. At my local immigration office, how should I go about extending? I have an apartment until January so should I apply for the Covid extension or tourist visa extension although I came on visa exemption?

TLDR : Answer Summary
If you received a 30-day visa exemption stamp upon your arrival in Phuket, you can apply for an extension at local immigration offices such as Patong Beach, Blue Tree, or Phuket Town. You have the option to request either a Covid extension or a standard tourist visa extension. The Covid extension offers 60 days and is priced at ฿1,900, but it's uncertain if it will continue beyond November 26. If you request the Covid extension and it is not granted, you will receive the standard 30-day extension instead. Ensure you return for any needed adjustments before the November deadline.

Ask for the covid extension, they may or may not give it to you first. If they don't they will give you the 30 day standard extension, then return before November 26th and ask for Covid extension

The normal extension gives you 30 days, Covid extension 60 days. Price is the same, 1,900 Baht. The last possible day is 26. November at the moment

First you will have to go to immigration to see what they allow…immigration offices make you pay the ฿1,900 baht 30 day extended fee…the Covid extension ends on 26 Nov and nobody knows if it will be extended…the country is opening 1 Nov

You can apply for a exempt extension at any of the three immigration offices. Patong Beach, Blue Tree or Phuket Town. If applying for the Covid extension then it must be Phuket Town.

this is the list for Phuket. My guess is Chiang Mai will be very similar, but each office tends to have their own rules so this is just a guide line. If you’re near the office pop in and ask them for their handout.
