Does the eVisa for Thailand show the date of issue and is there an issue if activated after exit and re-entry?

Does the evisa shows the date of issue? I saw online that some people couldn't get their visa on time and only got approved while in Thailand and then just exited the country and re-entered to activate their visa. Won't the immigration officer check the date of issue? Anyone went through this process ?

Yes, the eVisa for Thailand does display both the date of issue and the validity period. Many travelers have successfully applied for their eVisa while already in Thailand, receiving approval only after their arrival. They printed the eVisa, exited the country, and re-entered to activate it without any issues. Immigration apparently does not have problems with this process, especially since the Ministry of Foreign Affairs is promoting the eVisa.

shows the date they're issued and the date they're valid until 🙂

Many MANY people applied for their eVisa, then before it got approved came to thailand.

After they were here they got the email it was approved 😮

They printed it, bounced out and back and activated an entry on it without issue

They seem to be fine with the situation you describe ie apply for visa outside Thailand. Arrive before issue and so enter Visa Exempt. DTV issued. Exit and re-enter to activate DTV. Now what happens if you apply while in Thailand online for DTV and everything done remotely? Is that the question?
