Those who have DTV soft power visa. Do you need to book an additional course after documents for the first expire? And does immigration ask for course documents during re-entry?
Many courses are sold for 6-12 months, so I’m wondering what to do after documents for course expire.

TLDR : Answer Summary
Those holding a DTV soft power visa must consider enrollment in courses after their initial documents expire. While immigration currently does not require proof of ongoing enrollment upon re-entry, they may request this documentation when seeking a visa extension. It's important to maintain ongoing activity related to the visa to ensure compliance.
When you are not enrolled anymore in the soft power activity, your stay in Thailand does not match your visa anymore. When you are entering the country the IO can check this, but most times will not do so.
Currently for entry and another 180 stamp there is no need to show ongoing courses. If you wish to extend in country at an Immigration Office you will need to show this.
If you extend at immigration you need to show ongoing activity. Currently no requirement to show on arrival at airports but some SPers say they have been asked to show current enrolment
