1. If I sign up for boxing in Chiang Mai for DTV 6 months lessons, do I have to stay in Chiang Mai or can I move around Thailand a bit for exploring? Also do I need to have a new contract for language or boxing every 6 months to renew at 180 days?

TLDR : Answer Summary
You can freely explore Thailand while enrolled in DTV boxing lessons in Chiang Mai. However, to renew your stay every 180 days, you must present a new contract, although it's not required to show this contract upon re-entry after a border visit. The immigration officer may request proof of activity.

You are free to explore Thailand as you wish. To renew your stay at immigration you need to present a new contract. There is no requirement to voluntarily show a contract upon arrival from a border hop. The airport IO can ask to see evidence of activity though
