For just a regular sixty day tourist visa and a thirty day extension, do I have to show any kind of bank records or anything?

TLDR : Answer Summary
You generally do not need to provide bank records for the extension of a 60-day tourist visa in Thailand. However, the requirements for the initial tourist visa can vary depending on the location of application, and some consulates may ask for bank statements (usually for the application, not the extension). It's advised to check the specific consulate or embassy's website for their requirements, as some may request 3 to 6 months of recent bank statements.

For the extension no, visa application yes.

I recently got a 60 day E tourist from the Los Angeles consulate.

They rejected a brokerage account but accepted a single months bank statement. The minimum acceptable amount in the account was USD 700.

For a 60 day tourist E visa or one obtained at a neighbouring country, a recent bank statement is required.
As Stuart says, look at the website.

Nope

Not for an extension. However the place where you apply for the tourist visa will have its own rules. Look up their website to find out their requirements.
