If I’m a one man band of my own Ecommerce company, do I need to provide 1/ an employment contract to myself (e.g. position: Director)? 2/ salary proof?

No salary proof. Chat GPT will write you a letter stating you own it, your title, and that you can work remotely from anywhere. If you don't have a portfolio then you would need to create a contract. Something to show you are working and have work. Hope this helps
