You book the hotel for as long as the official visa processing time is at the respective consulate. You can find the processing times on the homepage of the respective consulate

You are posting this question every where but never say what are u trying to do.....my guess trying to apply for dtv BUT don't know how to long to stay in that country ....u better stay where u are applying until its approved OR the risk of being rejected and goodbye to your application fees
