TLDR : Answer Summary
When leaving Thailand with your half Thai children, it may not be necessary for their mother to accompany you to immigration. However, having a written letter of consent from her, along with a copy of her ID, is highly recommended to avoid issues. In some cases, immigration may contact her for confirmation. If you don’t have her present, it's advisable to get the appropriate documentation from the Amphur (local district office) to ensure a smooth process. Immigration typically does not allow non-ticketed individuals into the area, but the mother can wait outside in case her presence is required.

I've been able to take my son out with a letter from his mom and a signed copy of her ID card. The first time I took him, the officer called to speak with her. Second time, the letter sufficed and my son acknowledging that I am his father and that we were going to visit his grandparents in America. Definitely get something in writing and have her available to accept a call if necessary. Best of luck to you.

As Immigration is behind airport security and only for access for people with boarding pass it do not believe the mother can go all the way to Immigration. You need as Anders said prepare the documents before you make your way to the airport.

My ex wife managed to fight her way into there and stop me from flying. Just saying but yes get the document from Amphur it is a special paper for permission to leave the country.

You can go to the Amphur and get a document for that reason. Otherwise yes could have an issue. She can not get in to immigration with you but she can wait outside and if called for they can bring her in. But get the paper from amphur and you god to go.
