Not really a visa question as I know Thai national has 30days exemption to go to hong kong. As you lot knowledgable my question is what is required for me and wife to take Niece and Nephew to Hong Kong without their parents? Also do children in Thailand have individual passports like in UK or on their parents?

TLDR : Answer Summary
To take your niece and nephew to Hong Kong without their parents, you will need written consent from both parents, typically in the form of a notarized permission letter. Some commenters suggest obtaining this document from the amphur along with the children's birth certificates to ensure legal compliance. Additionally, it's implied that the children's ages (4 and 8) are important, and while traveling with you as their legal guardian should pose no issue, it's advisable to check with your airline for any specific regulations they might have regarding traveling with minors.

You 100% need written consent from the parents to accompany minors out of the country, and has to be a legal document, a notorised permission letter, I'm not sure of the exact process here in bangkok but this 100% required

I don't know about Thailand and Hong Kong, but in most country you need permission from both parents to travel to other countries.

According to some online posts the mother of the children should go to the amphur with the birth certificate and get a letter from there, that states, that she gives her consent that you can travel with her children. Maybe she can call the amphur and ask there?

Maybe also get that translated for the immigration in HKG?

Thanks will speak with Amphur

You make no mention of the children's age, but if the airline permits them to travel, HKG immigration will be fine.

Usually only an issue when they are "unaccompanied" minors. In this case, they are traveling with you (legal guardian) but I would check with your carrier as some airlines have their own unique rules to follow.
