Hi, I’m from the UK and planning to come to Thailand in December. I am staying for a week and then flying to vietnam and then back to Thailand. Am I able to do this on the normal tourist visa or would I need a multiple entry visa?

Depends on how long you're staying when you return the second time. But if you got a tourist visa you would use it when you enter the first time and get your 60 days then lose them all as soon as you left.
