Can local immigration offices see under what condition (work cation, soft power - and what kind of soft power) the dtv was approved when visiting them for extensions or any other needs?

If you've done any form of extension in Thailand before you would know you have to state the reason for the extension on the TM7 form, so whether they know or not, you have to tell them, and then sign the form. Do you have something to hide?

so what does that mean if you say for example take a cooking class and it finished before you extend? You have met the criteria as long as you keep the funds up....is the latter the only thing you need to prove? What if you used working remote as the requirement but then stopped working?

It's relatively new, so nobody knows until they confirm on FB. Take things people on FB say with a pinch of salt. The ones giving spurious advice more than likely are not even on the DTV visa.

They seem to want ALL documents updating if extending, so bank account proving you still have 500k baht, activities updated, remote working updated etc .

If I had to bet I'd say no. It does say on some visas. If they don't know and want to they could ask to see your original documents you applied with.
