TLDR : Answer Summary
You can travel to Thailand for a total of 6 weeks, including 2 weeks in Vietnam and Cambodia before returning to Thailand for 30 days, as long as you are aware of the visa regulations. Upon arrival in Thailand, you will receive a 30-day stamp under the visa exemption program. However, if you plan to re-enter Thailand after your time in Vietnam and Cambodia, you need to check whether you will require a new visa or if the 30-day exemption is applicable again. Also, keep in mind that Vietnam and Cambodia may require separate visas for entry.

The day I arrive inBKK I will fly out again to Vietnam and return 2 weeks after to Thailand, is it upon this return I need to renew my 30 day visa?

Ok that is what I was hoping, I will only spend 30 days in Thailand in total, but did not want to cause proplems at the airport for overstaying 2 weeks

No :/ , when you arrive here you will be stamped in for 30 days, then when you leave to fly to vietnam you will be stamped out of the country.

When you come back you will get a NEW 30 day visa exempt entry stamp and IF you want to stay longer than 30 days you can extend that stamp for 30 more days at the immigration office for 1900baht.

IF you fly to thailand without having bought a visa from a thai consulate before hand you will be stamped in for 30 days on the "visa exempt program". You can extend that by 30 more days at the immigration office for 1900baht.

There is a limit of TWO 30 day visa exempt entries by land in a calendar year (Jan 1 to Dec 31) BUT there is no official limit to the number of them you can get when entering by air.

I'm British, will fly Manchester-BKK return. I was led to believe I'm only allowed 1 month in Thailand, but my query is I'm I allowed to stay 6 weeks from start to finish if I split the trip with 2 weeks outside of Thailand?

you were led to believe incorrectly ;)

You might be within Thai rules, but Vietnam and Cambodia require separate visas

I don't know what rules you're referring to but how about stating your nationality?
