To spend 6 months this winter, can I do tourist visa single entry for 60 days, go to KL for a few days, come back on a visa exemption for 60 days, go to Vietnam for a week and finally come back on another exemption for the last 59 ish days?

You are following a pattern of a tourist, visiting places around Thailand. Lots of people base out of Thailand when visiting other countries. You won't have any problems.

You'd be better off not getting a visa at all. Show up with your passport and get the new 60 day visa exempt and then apply for a 30 day extension. Then do one of the border bounces you listed and then get another 60 days upon your return along with another 30 day extension.
just check, I’ve seen some websites and YouTube channels that say you can only do 2 entries into Thailand in a rolling year now , by air and land , but it doesn’t explain it well on Thai embassy website

My understanding is that you're correct, however, check out the Thai embassy page (Canberra).. at the very end of the page.."Please note that visa exemption can be used 2 times per calendar year."
the embassy in Canberra does not get to decide entry policy. That's the immigration department. The embassies aren't even under the same government agency as the one that decides
