Just double checking something here.

I extended my visa exempt by 30 days at Immigration last week. When the 30 days runs out, can I just renew again or do I have to leave the country and come back in on a fresh 30 day one ? Cheers

TLDR : Answer Summary
You can only receive one 30-day extension for a visa exempt entry in Thailand. After this extension runs out, you must leave the country to gain a fresh 30-day visa exempt entry or apply for a tourist visa at a Thai consulate in another country. Additionally, be aware that you can only have two 30-day visa exempt entries by land within a calendar year.

you can only get one 30 day extension per visa exempt entry.

You'd need to leave and re-enter the country to get another 30 day visa exempt entry or go to a thai consulate in another country and buy a tourist visa.

Remember though you can only do TWO 30 day visa exempt entries by land in a calendar year.

, not really,

You are not gonna be able to do it very many times without being questioned a LOT by the immigration officers at passport control when you stamp in.

Especially if you're tryin' to live here on back-2-back visa exempt entries..

so basically they can fly to Thailand for 30 days and then extend another 30 days and then flew out and come back in for the whole year?
