Hello. Arriving from UK 8 may and plan to depart 3 months later. I am aware of the 30 day visa, but what process do I need to follow for an addional 60 days please?

There is some news about revoking visa-exempt to be back to 30 days. But NO official announcement yet, and we are not going to discuss this topic until official information is released.

You are mistaken about some points. You will enter on a visa-exempt for 60 days, not 30 days. At the end of your stay, go to the local immigration office to apply for a 30-day tourism extension for a 1900 baht fee. Don't forget to fill out and register TDAC.
