Hey. So tomorrow I’ll renew my tourist visa but I don’t have a TM30.
I did stay at a hotel for 3 days when I first came here but I’m not sure if that’s relevant or not. What’s my best option? Can I just check into a hotel today and go there tomorrow?

Keep in mind if you go to another immigration office you need to have an address IN the area that is served by that office. Meaning you can't go to the Samut Prakan immigration office using a bangkok address of where you're staying.
You said you're in Bangkok, GO to the government complex out at Chaengwattana Road and get your extension. IF you get there around 9:15 (after everyone else has gotten in to the building) you'd be out by 10-10:30 because tourists don't wake up early and the section you need to go to will not have many people in it
