Hi. At the time of my yearly visa renewal (O retirement visa) I'll be out of the country. Can I go before my departure to renew? Anything I should know before going to Immigration? Thanks for your help.

TLDR : Answer Summary
You can often renew your O retirement visa up to 45 days before its expiration date while still outside the country; however, this mainly applies in specific regions like Bangkok and Chiang Mai. It's essential to consult your local immigration office ahead of your travel, explain your situation, and provide proof of your travel plans, such as a round-trip ticket, which might grant you some flexibility in the renewal process.

If you are not in Thailand during 30 days before (45 days before in Bangkok, Chiang Mai, and a few other provinces) until the last day of your current extension, talk to your local immigration office in advance. Bring proof that you are not in the kingdom so that sometimes IO gives you some flexibility. You may need to show a round-trip ticket, with the date specified (an open ticket wouldn't help).

ASK your Thai immigration office
But many will allow you to get the one year extension of stay as retired up to 45 days BEFORE your current expiration date.
Many are 30 days. BUT if you explain the need to extend EARLIER, ask them for permission.
I think it's 30... But do know if you have reason to extend earlier they are helpful. Example... Booked medical care surgery... Travel outside Thailand.
