I've been told by all you helpful people that on a 6 month METV, after 60 days I can request a 30 day extension at immigration then do a border run. Great news!

I spoke to the visa department at the London Thai Embassy and they have said 30 day extensions are not granted on a 6 month ME visa because I can leave the country and come back in - confusion!! Does anyone have experience with this? Has anyone ever been refused a 30 day extension?

TLDR : Answer Summary
There's some confusion regarding 30-day extensions on a 6-month Multiple Entry Tourist Visa (METV). While many believe that it is possible to request a 30-day extension at immigration after staying for 60 days, the London Thai Embassy has stated that such extensions are not granted for this visa type, as travelers can leave the country and return. Some commenters advise against relying on embassy information about immigration procedures in Thailand, citing their different authorities. Others have shared personal experiences of successfully obtaining the extension.

The best thing to do with the Thai embassy in London is, in my experience, just get visas from them. When they offer advice about things they're not actually involved with (Immigration department in Thailand being nothing whatsoever to do with any embassy or consulate abroad) is to just smile, then immediately forget anything they said.

They are the squirreliest of squirrely people in there and seem to think that they are a law unto themselves, and expert in everything.

totally wrong.

That is one reason you never trust a thai consulate about something you do AFTER you enter thailand, and you never trust the thai immigration office about something you do BEFORE you enter the country. Two totally different government agencies.
