I've heard a few times that you can actually stay for nine months on the six-month visa you get from your home country.
Can anyone explain how exactly this would work as I'm confused!

The METV allows you to enter multiple times until the date of validity. Each enter is good for 60 days. You can extend an enter by 30 days.
So, if you leave the country and enter again the last day of validity, they will stamp for 60 days, plus 30 days extension. As the validity is six months, 6 months + 60 days + 30 days = 9 months.

So the theory goes. I have METV and have been in Thailand since August 1st. Extended by one month then did obligatory bounce. Coming back into HKT I was taken aside and grilled. My final day for entry this METV is January 24th. I was told by the I/O big cheese that they may not let me back in on the 23rd January which is when when I was planning on returning from home, to use up my allowance, so to speak. Plenty of coin, no issues, good clean living character, I really do not understand the hoo-haa.🤔
