Can I extend my NON-B visa for 7 days before my flight out of Thailand?

Hello. Looking for some advice, please.

I have completed my employment contract and my NONB expires on 31 July 2024. My flight out of the country is on 6 August 2024. My HR team said I could pay 1900baht to extend my nonB for 7 days. Is that correct? What documents would be needed?

On top of what has already been said: be careful to not get the 7 day stamp any sooner than on the very last day. It's not an extension, it's a new stamp that gives you 7 days from that point onwards. The day you get the stamp is then also counted in full, so if you do it on the last day, your stay is "extended" by only 6! Because that's the exact number you need, you don't have any slack and you can only do this on July 31st.

these are the common found requirements for the extension of stay at Thai immigration office for 1900 Thai baht.

Be sure to have a TM30 address registration on file with Thai Immigration.

You are applying for the 30 days extension...

BUT Will be denied and given 7 days FROM the DATE you APPLY to leave Thailand.

, you will use TM7, usual extension application form. Be sure you are going to the local immigration office on 31 July as application-denied-7-days-to-leave-kingdom starts on the day of application at most offices, not being added.

you need the termination paperwork from your employer and take that to the immigration office that issued your extension, cancel your current extension (doubtful you're on any Non-B visa).

Then while you're there you buy the 7 day (extension denied) stamp that gives you a week to get out of thailand for 1900baht

You wouldn't be extending anything and as I said I don't think you're on any Non-B visa but instead on an "extension of stay" based on employment (read the current stamp in your passport)
