ORIGINAL POSTER
I am currently in Thailand on a 60 day tourist exempt stamp which I would like to extend for 30 days, with the aim of doing an in country conversion to a Non B visa.

My question is about transferring to a new passport as the current tourist exempt stamp is in my old passport but I would like to go forward with my new passport.

Can I just go to IT square Lak Si with both passports, apply for the 30 day extension as normal and then request for the extension stamp to be done in my new passport?

I have a letter from my embassy about transferring to a new passport.

(There are only 3 months left in my old passport)

Thank you

TLDR : Answer Summary
A user is seeking advice on extending their 60-day tourist exempt stamp by 30 days and converting to a Non-B visa, while the stamp is in their old passport. They inquire if they can apply for the extension at IT Square Lak Si with both passports and a letter from their embassy confirming the passport transfer. Multiple comments affirm that it's possible to apply for the extension in the new passport.

How did you come in on one passport and get a new passport so quick?

That's correct.

Go to the IT Square Laksi Plaza office with both passports and a letter from your embassy.

There is an information/reception desk where you can ask for details of applications.

Tell them you want to apply for a tourism extension on a new passport. They will tell you which order you have to apply.

You apply for a 30-day tourism extension on your new passport.
