I wonder, is it possible to just email the necessary documents to a Thai embassy first and asked them to review your docs before booking your flight tickets and hotel ? Has anyone ever tried that?😆

They will give you advice, when you have paid the fee.
They do not waste time to do anything for free.
Start the application proces, which can be interrupted at any stage, if more documents need to be procured, you can start again the the point, where you interrupted.
If the documents isn’t sufficient, they will as for more, and specify what they need.

I tried sending the Taipei embassy a few documents to review yesterday and they said they do not review documents via email.

Just put estimate date of flight and hotel you don't have to buy them before you apply for visa.
