For Thailand you get a free visa exemption entry for up to 60 days on Australian passport.
Nothing to do before you arrive and just present your Australia passport to Thailand immigration and get stamped for entry.
For Vietnam you will definitely need a visa before you travel..
If you intend to go to Vietnam and then to Thailand and eventually return to Vietnam before flying home you will need a 90 day multiple entry visa for Vietnam..
This allows you to come and go from Vietnam as often as you like during that 90 day period.

You can't get Visa on Arrival, since that's only for a few countries and it's where you apply for and pay for a visa at the airport and get a 15 day visa.
I assume you're actually asking about visa exempt, which isn't any visa at all, it's just a free entry stamp. If you have a passport from a visa exempt country, and you arrive without a visa, you can get a visa exempt 60 day entry.
Save the boarding pass from the flight that got you to Thailand. Sometimes, they ask for it. Also, 3 weeks ago, the immigration officer asked to see my onward ticket out of Thailand. This is very rare but it happened to me. Fortunately, I had one.
