You need much more than just a letter, contact the school, let them contact the immigration Office to find out they are able to convert your Visa Exempt Entry or Tourist Visa into a Non Immigrant B Visa, if they are unable to do this let them contact a Thai consulate to find out the requirements to apply for this Visa. In the mean time they can contact the Ministry of Labor for a Work Permit and the Ministry of Education for your teachers license.

You apply for the Work Permit, in that Work Permit is the description of your job. That is what you are allowed to do, let the school contact the Ministry of Labor and apply for this Work Permit. With the documents WP3, application of work permit approved, you vist the Thai Consulate and apply for the visa.
