Can I convert a tourist visa exemption to a Non-B visa in Thailand for teaching?

Yep, people can and have totally gone from a 45 day visa exempt entry stamp to a 90 day in country Non-B visa based on employment at the immigration office. It costs 2000baht, and your employer needs to meet the documentation requirements for it. You also need at least 15 day and sometimes 21 days (depending on the office you apply at) left on your current stamp to apply.

Your best bet would be to take someone from your employer TO the immigration office and get the hand out listing the requirements to get an in country 90 day Non-B visa.

a 60 day entry stamp? Meaning you just recently entered the country on a tourist visa and went thru quarantine?

I enter on the 22nd March and exit quarantine on the 6th April (45 total validity)

ahh I get it now I misread you don't have a "tourist visa" exemption ;) You have a 45 day visa exempt entry stamp. :)
