TLDR : Answer Summary
As a Polish citizen, you can stay in Thailand without a visa for up to 30 days, but for a minimum stay of 90 days, you might consider applying for a Single Entry Tourist Visa (TR), which initially grants you 60 days and can be extended for an additional 30 days. Alternatively, a Multiple Entry Tourist Visa is an option, allowing multiple entries over a period of 6 months, with each stay for 60 days, also extendable. If you are still residing in the UK, you might have the option to apply for an e-visa; otherwise, you would need to go through the traditional visa application process in Poland.

Confused about the multi entry TR compared to the single entry

If you're still resident in UK then even with Polish passport you can apply for an e-visa. If you're back in Poland then it will be the old fashioned way
Single entry tourist visa (TR) gives you 60 and you can extend once for a further 30 days. A multiple entry is valid for 6 months and you get 60 days on each entry also extendable. With good timing you can get almost 9 months off that visa.
