Once the Vietnam visa goes online on October, will it still be possible to go physically to the embassy and apply the documents there or will it only be online?

I would bet dollars to durian it will NOT.

At this time there is no thai consulate on the eVisa system that allows you to go to that consulate and apply for visas in person

You will make a log in, upload the documents, pay for the visa, then wait for either a request for more documentation, an approval or a rejection

AND

You will lose the application fee if it's rejected 🙁
