TLDR : Answer Summary
A TM30 obtained from a 1-month Airbnb stay in Bangkok should be sufficient for obtaining a Certificate of Residency (COR) necessary for opening a bank account. However, this depends on whether the landlord is willing to issue the TM30, as it is typically posted to you.

Yes if the landlord will give you one. Unfortunately it gets posted to you so there is no workaround when staying in Bangkok.
