TLDR : Answer Summary
The choice between Chaeng Wattana and Muang Thong Thani for a visa extension depends on your current visa type. If you have a regular tourist visa, you should visit Chaeng Wattana. However, if you entered Thailand under the 30-day visa exemption, then you need to go to Muang Thong Thani. Note that the letter from the embassy grants up to 30 days but does not guarantee a full extension.

we should probably ask WHAT type of visa you're on here.

IF you're on a REAL tourist visa <- that you got from a thai consulate in another country before you came here you go to Chaengwattana Section J

BUT

IF you're on a 30 day visa exempt entry (meaning you showed up with no visa in your passport and were stamped in for free for 30 days) you go to Muang Thong Thani

you will not get a 30 day Extension of Stay.

With the Embassy letter you will get up to 30 days, meaning between 1 and 30 days to provide you enough time to arrange a flight backt to France.

You do this at the Muang Thong Thani place
