Hello my parents have to renew their 30 day tourist visas on Jan 5th. We want to go to an island then. Can they Renew for 60 days? Then we could go before the 5th and be able to go away. Any help?

There is no 30 days tourist visa. If they were stamped for 30 days upon entry to Thailand, they might be on a visa-exempt scheme. If so, they can apply for a 30days tourism extension once.
Immigration offices will be closed from Dec 31 to Jan 3. You can go anytime they are open. Tourism extension will be added to their current stamp, they wouldn't lose any days.
It depends on the immigration officers they will deal with whether they can apply for a 60days extension based on being unable to travel due to Covid. You need to ask to IO.
One thing is, there are a few nationalities that will be stamped for 30days on the visa waiver program on a bilateral agreement. If they have those passports, they cannot apply for a 30days tourism extension.
