What visa options are available for staying in Thailand after quitting a working visa?

I am currently on a working visa but quitting the job end of the month.

I would like to stay a few more months (let's say 3 months for now) before joining my next job, what are my options?

Would it be a problem to get Tourist Visa if I just finished my working one? Or should I do ED or something else?

I am OK to go out and in if needed.

You can’t get a tourist visa in Thailand.

Up until July 25th you could apply for a Covid extension although they are given at the behest of the immigration office(r) so not a guarantee.

An Ed visa is an option, or you could do a border hop and either buy a tourist visa from a nearby embassy/consulate or if eligible visa exempt. the former would give you 60 days the latter 30. both you can extend for a further 30 days in country.

so if I go back to my home country to visit my parents there should not be any problems getting a tourist visa? Or there maybe an issue and that's why you say "buy"

No issue. I said buy, because they’re not free. They may question you either at the embassy or on arrival (unlikely but they could) and just tell them that you have a few things to sort out before you go home.
