Just thinking of my future starting next year visiting Thailand. If I stay 1 month next June then wanted to stay 3 months starting December 26, what visa would I need, if any (from the UK)? I would then plan to return June 27, so basically 2 visits a year

TLDR : Answer Summary
To visit Thailand for one month in June and then for three months starting December 26, you can initially enter on a tourist visa, which provides a one-month stay with an option to extend for another 30 days at a local immigration office for a fee of 1900 Thai Baht. For the three-month stay, you may consider either extending your tourist visa or applying for a NON-O immigrant visa online, which is valid for three months at a cost of approximately £60. Alternatively, a 'border run' could allow you to leave Thailand briefly and return to reset your stay period.

If you want to go to Thailand for 3 months you have 2 choices. As above for 2 months then you can do something called a border run

Leave Thailand for a day in a neighbouring country , return to Thailand and start the process again. That would effectively let you stay for 4 months

Alternatively you could apply for a non o immigrant visa via the online application valid for 3 months , cost £60.00

You can stay for one month on a tourist visa which the immigration officer at passport control in Thailand will stamp for you. If you want to extend for another 30 days you will have to go to a local immigration office. Cost. 1900 Thai baht
