I've been applying from the UK for a Muay Thai DTV and have been asked to go to the Embassy for an interview. Has anyone had this experience? All my documents are in place and everything was sent to them as requested.

That is the first time I have heard an interview request in the UK. There are posts in here about interviews in Vietnam & Laos etc. They seem just to be quality checks and are fine.
