What should I do if my visa application document is unsigned and cannot be re-uploaded after it goes into 'pending' status?

I have noticed that one of the uploaded documents was unsigned by mistake. I don’t see any buttons to re upload it after my application got “pending” status.

Shall I find a way to contact the embassy (email them maybe) or just wait for their additional documents request?

Is there a chance to get declined because of that?

There is no way to re-upload.

That tab gets activated only if Additional Documents are requested by the embassy.

I had none of the documents signed so unless the embassy where you applied has this specific requirement, you should be fine.
