TLDR : Answer Summary
When applying for a letter of proof of income from the British Embassy, you can send scanned copies of your documents via email. However, it's important to note that the UK consulate will cease issuing affidavit of income letters by the end of the year, with the last day for applications being December 12th.

Keep in mind the UK consulate will discontinue the affidavit of income letters at the end of the year AND they will stop taking applications for them on Dec 12th.
