Can I get this by making an appointment at the Liverpool embassy.

What paperwork will I need aparrt from the acceptance letters from my employer.

Can this only be applied for in my home country UK?

There is not much information on the website of the Thai Consulate in Liverpool other than you can only apply for the Single Entry Non Immigrant B visa and the acceptance letters from your employer. You don't have to apply in your home country, lots of employees visiting neighbor countries of Thailand to apply for this visa.
