Answer summary

To obtain a tourist visa for Thailand as a Canadian citizen, you should apply online for an e-visa through the Thai consulate related to your location in Canada. After the online application submission, you will need to send your passport and required documents to the embassy. Additionally, you'll need to apply for a Certificate of Entry (COE) after your visa is conditionally approved. Required documents for the COE process include health insurance, proof of flight and hotel bookings for quarantine.

Start at your embassies website. You'll need to submit an application online. once it's conditionally approved you mail your passport and documents to the embassy.

After you get your passport back, you need to apply for a certificate of entry online. You'll need health insurance, quarantine hotel booked, and flight booked.

you'll also need to request permission to enter the country and meet the entry requirements which at this time are;

have 100K US dollars in covid specific insurance

have 14 days quarantine booked at an approves ASQ Hotel here

have a negative RT-PCR covid test within 72 hours of your flight departure

have a Certificate of Entry from the Ministry of Foreign Affairs

(NOTE: you need those things no matter what type of visa you're using to enter thailand)
