I think you want to go the route of self-employed so I suggest you send in 2 documents. One is a self employment declaration (use chatGPT or grok to get the template). Second is your business portfolio doc. Again, use grok to create the template

You're going to have to show your income somehow so I don't think you can hide the tattoo business. It might be a lot easier for you to use one of the soft power options
to be honest I think it would be pretty confusing for them. A business registered for one thing but then getting money from another, I don’t think they’d allow it. Why don’t you sign up to Muay Thai school or something and try that route ?
