TLDR : Answer Summary
The user, a French citizen, seeks clarification on the necessary documentation for applying for a 60-day tourist e-Visa on the official Thai government website. They express concern about the extensive list of documents required, including proof of an 'alternative COVID hotel', especially since they have not yet booked their flights or accommodations. The discussion includes questions about the minimum required documents for the application.

my 60 day e visa came really quick......its a pain in the neck when here in Thailand to waste a day and money at immigration to extend the 30 day one......evisa was easy 40 usd

Arrive on a 30 day visa for free, then get a 30 day extension @ an immigration office..cost 1900 baht...

You can tell them proposed flight date.

during the process yes, but at the end, step 4, they request for all the paid proof

, on the Au website, they ask for flight booking, OR proposed flight date, understanding that you will book flights once you have your visa.

Over the past 10 years I have done 30 or so flights to Thailand, never had to prove flight booking..just estimate of travel date.
