TLDR : Answer Summary
To transfer your permission to stay from an old UK passport to a new one in Chiang Mai, you will need to present the following documents: the photo pages of both passports, a copy of every page in the old passport, a 90-day report, a TM 30 form, and the request form for transferring stamps as provided by the UK passport office. According to recent experiences, no financial information such as bank statements is required, and it is important to note that this process can only be completed at the main immigration office located by the airport.
