Hello. I already know all the steps for getting covid extensions but I am not sure my Embassy issues letters anymore and knowing my the Gov in my country most likely the site is not updated so I can use the screenshot. Is there any other method if I cannot get the embassy letter anymore? Thanks

Up to your embassy though, people contact their embassy/consulate in Thailand to ask for the letter, then receive the email saying they don't issue the letter. Print out of that email would be sufficient.
Contact them. They will let you know if they know cases of people asking for such letters. Here in Bangkok they are quite relaxed about it. At least, it is what my embassy told me.
But I have been working on a strategy; it is very straightforward, veyr simple. I am going to go on May 25th with all the documents required 'by tradition', so in the unlikely case they asked me for a letter from my embassy, even though my embassy confirmed they had not been issuing those for a long time, I can make an appointment or similar on time before the deadline. What do you think about such strategy?
Use the screenshot if needed by your Thai immigration office. Most offices do not require proof...just a statement by you that its not available from your Embassy.
about all you can do is try and apply. Do it days before the end date of May 28th for the Covid extension. That way if problem you have a few days to correct.
