TLDR : Answer Summary
Starting January 1, 2025, Thai consulates in Taipei, Yangon, Singapore, Manila, Vientiane, and Savannakhet will stop accepting in-person walk-up visa applications and switch to the eVisa online portal. Each consulate has specific cut-off dates for in-person applications, with some already fully booked. It is advised to check individual consulate notices and apply in person before their respective deadlines.
I would suggest ANYONE wanting to get a visa at a "walk up/apply in person" consulate get to the thai consulate in Taipei on or before the 27th of December because hands down that is the most "user friendly" consulate in S/E Asia right now.
