Is it still possible to get an ED Visa at the moment? I guess that would be an option to stay longer in Thailand without having to leave the country.

you need to FIND a school that's open, (seeing as they're all closed for 2 weeks now) enroll, wait for the paperwork from the MOE, then GO to a thai consulate and buy the ED visa.
