Is it simpler to get 2 single entry visas or 1 multi-entry visa for Thailand?

2 single stay visas or 1 multi entry visa ?

We spend 3 days in Bangkok then fly elsewhere but return to Bangkok 1 month later for 3 weeks . ( so 2 times in Bangkok in 2 months )

If I have both the options above which is simpler please? ( ie no need bank statements etc)
