I submitted an employment verification letter from my employer stating I’m a regular employee (I’ve been with the company since 2019). The letter includes my job details and is signed by a company officer. I can also provide recent paystubs, and I’m listed on the company website.
Is an employer letter + paystubs usually enough for DTV approval, or do they require an actual signed employment contract?

Mine was approved with a letter like that. Mind my company is the top company in the sector in the country I applied at. I say this because I've heard that if it's a small or less know company, they can ask more documents such as the business registration, tax records, etc., just to verify that the company does exist.
They'll likely also need confirmation from your employer that they are happy with you working remotely from Thailand and that you will have no interaction with Thai entities or clients inside Thailand
Depends on the Embassy or Consulate. One thing that you didn’t mention that may be requested is a line in the letter stating that you may work remotely from Thailand or anywhere in the world as some consular offices want to see that explicitly.
