So DTV for Thailand looks like our best option.  Thank you all for your help!  Quick question: is 500,000 Thai baht bank balance sufficient to apply for a husband with his spouse as a dependent, or do you need to double the bank balance to 1 million Thai baht for 3 months?

You need main applicant to apply first and get it approved. Then you can apply for spouse visa with your visa. In theory, you could transfer the money you used to your wife’s account after yours got approved.

You will get lots of different answers depending on what each person has experienced. Some embassies require 500K each, others 500K for applicant and a letter saying they will cover the dependant, and some just 500K for the original applicant and dependants ( children as well) are included
