How long is a letter of income valid to use for renewal of NON O yearly extension. 

When should I go and apply at immigration office.

I am N.Z citizen Extension of stay up for renew/expires  1st January 2021

the notary letter of income from abroad is good for 6 months from the date it's issued.

You can apply for a new extension of stay at most immigiration offices when you have 30 days or less left on your current extension,

SO in your case depending on your immigration office you can apply after Dec 2nd.
