TLDR : Answer Summary
A letter of income from abroad is valid for 6 months from the date it is issued. You should apply for your NON-O visa extension at the immigration office when you have 30 days or less left on your current extension, which means in your case, you can apply after December 2nd.

the notary letter of income from abroad is good for 6 months from the date it's issued.

You can apply for a new extension of stay at most immigiration offices when you have 30 days or less left on your current extension,

SO in your case depending on your immigration office you can apply after Dec 2nd.
