To cancel your work permit in Thailand, visit the Ministry of Labour where you obtained it and proceed with the cancellation. If you're on an extension of stay, take the cancellation receipt along with your termination paperwork to the immigration office. They will cancel your extension and provide a stamp valid until the date specified on your termination paperwork. It's advisable to do this a week before your termination date. Subsequently, you can leave the country with the new immigration stamp.

Most people do this a week or so BEFORE the date on their termination paperwork. Immigrations will stamp you in until that date on a new stamp and then you can just leave the country
correctly stated; IF you don't mind running off the rails should you ever intend to work here or hold a long term extension of stay you could just exit the country
BUT
keep in mind, stamping out of the country on an extension or letting a work permit expire doesn't cancel them officially.

Shannon Green if you don’t mind that you will be in trouble in case you want to work again, or get non-Ed visa or non-o in Thailand in your future, you can skip that phase. If you want to work again (or stay on any other long term visa) you would face to 20,000 thb fine of overstay of current extension not canceled at least.
If you would never ever come back to Thailand, I guess it’s very fine if don’t cancel your extension or even work permit.
