Do you have to take a 5 day break from Thailand after a 2nd consecutive border run (i.e at 360 days)? As I understood it's up to 360 days per year? Thanks

There is no such rule.

You can stay up to 360 days per entry, with one extension.

No, it's 180 days per entry. So you can always enter, exit and reentry without breaks during the 5 year validity period.
