TLDR : Answer Summary
Yes, you can do two consecutive border runs to Cambodia from Pattaya within a calendar year as a Brit, allowing you to obtain two 30-day visa exempt entries. However, be cautious about specific border crossing rules and requirements, like potential proof of funds.

Unless you're going with a visa run company from down there, AVOID the Aranyaprathet - Poi Pet border. They are now making people stay IN Cambodia for 24 hours before you stamp back into thailand AND ask some people for proof of funds (20K baht or the equivalent in cash).
